Here's one for delicious old fashioned rice pudding.
(I haven't made it yet, but I tasted it last month and it's great!)
Ingredients:
1/4 cup rice
4 cups milk
1/2 tsp salt
2/3 cup sugar
1/2 cup raisins
1 tsp vanilla OR dash of nutmeg or lemonrind
Directions:
Add rice to milk with salt, sugar, and flavoring.
Pour into casserole dish
Bake uncovered for 3 hours at 300 degrees.
During first hour, stir in raisins
Serves 6
And of course, my famous lemon bread!
Ingredients:
1 1/2 c flour
1 tsp double-acting baking powder
1/4 tsp salt
1 T grated lemon rind
1 stick (1/2 c) butter
1 c sugar
2 eggs
1/2 c milk
topping:
1/3 c sugar
1/4 c lemon juice
Directions:
Preheat oven to 350.
Sift flour, baking powder and salt together into a bowl.
Stir in lemon rind.
In another bowl cream together butter and sugar until mixture is light and
fluffy.
Add eggs, 1 at a time, beating well after each addition, and stir in the
flour mixture alternately with the milk.
Pour the batter into a well buttered and floured loaf pan, 8 1/2 x 4 1/2 x
2 3/4 inches, and bake 50 minutes or until a toothpick inserted in the
center comes out clean.
Meanwhile, in a small bowl stir 1/3 c sugar into 1/4 cup lemon juice until
dissolved. Pour mixture over the bread while still hot. Let cool on a rack
for 10 minutes, then remove from pan to cool completely.
Note: Substitute limes for lemons and add just a drop or two of green food coloring for a St Patrick's Day version
